Hong Mao Feng (Chinese: 红毛峰, pinyin: hóng máo fēng) is one of the most exquisite and recognizable varieties of red tea, originally from the Chinese province of Yunnan. Its name translates as "hairy peaks", and it perfectly reflects the appearance of tea leaves covered with delicate white fluff.
The history of Hong Mao Feng begins in the early 20th century, when Chinese tea masters, inspired by the success of Indian black teas, began experimenting with local varieties. The result of these experiments was a new, unique tea that quickly gained popularity both in China and abroad.
Taste and aroma
Hong Mao Feng has a bright, rich taste with fruity notes and honey shades. The aroma of the tea is sweet and floral, with light woody nuances. The infusion is usually amber in color.
Collection and processing
To produce Hong Mao Feng, young tea buds and the first two leaves are collected. The collection is done manually, which allows preserving the tenderness and integrity of the tea leaf. After collection, the tea goes through several stages of processing:
- Withering: The leaves are withered in the air or with artificial heat.
- Rolling: The leaves are rolled to damage their cells and release enzymes.
- Oxidation: Fermentation occurs, which gives the tea leaf its characteristic color and aroma.
- Fixation: Fermentation is interrupted by heating the tea.
- Drying: The tea is dried to the desired moisture content.
In order to reveal the full aroma and taste of Hong Mao Feng, it is recommended to use water at a temperature of about 95°C. The tea is brewed in a gaiwan or porcelain teapot using the pouring method. For one brewing, 7-8 grams of tea per 150 ml of water is enough. The first brewing time is 15-20 seconds, subsequent brewings can be increased by a few seconds.
