GABA tea was developed in the 1980s by the Central Research Institute of Tea and Industries at Osaka University in Japan.
To produce GABA tea, after the leaves are picked and allowed to wither under heat and humidity, the tea leaves are treated in a high nitrogen atmosphere for several hours, which promotes the formation of GABA (Gamma-Aminobutyric Acid). Then, to stop the fermentation and oxidation processes, the tea leaves are dried. At higher drying temperatures, the tea leaves become darker, and at lower temperatures, the tea leaves retain their green color.
"Alishan Lu Gaba" (阿里山绿, ālǐshān lǜ, "Alishan Green") is a GABA tea from the Alishan Mountains, a spherical twisted oolong with a green leaf, light, brightly acidic.
